In celebration of Black History Month, Bon Appetit has partnered with Chef Farmer Matthew Raiford. To celebrate our partnership we are introducing two meals from his book Gullah Geechee Recipes from a sixth-generation farmer.
Today at lunch, we will be serving Effie's Shrimp Creole, a coastal Georgia recipe. For dinner, we will be serving Calypso pork loin with mango papaya sauce and saffron coconut milk rice. Both recipes will be available for viewing at the station.
If you are interested in borrowing the cookbook, please reach out to Executive chef Brian Arteaga at barteaga@willamette.edu.
Be on the lookout all month for different chef spotlights.
