Rick’s Café reopens on the lower level of the College of Law tomorrow. Student Amanda Peterson said the reimagined café, now under Bon Appétit management and professional staff, will bring good and noticeable change to the student-centered space.
“The SBA (Student Bar Association) is excited to have quick, easy, nutritious options right downstairs for both staff and students,” Peterson said, “so we can spend less time leaving the building and more time involved in school.”
Director of dining services, Chris Linn, said in addition to a compact, seasonal menu of fresh expressed juices and smoothies, the café has quite the list of offerings for patrons.
“We're looking at a range of espresso café drinks using Caffe Umbria artisan coffee, Rishi teas, Italian-style sodas, pour-over coffee, yogurt parfaits and breakfast pastries in the morning, grab-and-go lunch items including sandwiches on local Cascade Baking Company bread, Goudy-style half-wraps, heirloom tomato (and other) salads, and select pre-packaged snacks,” Linn said.
Peterson said the new management will be a beneficial change for the café, which was previously run by students and governed by their schedules.
“The management change will allow greater reliability and consistency in the products,” she said, “which should increase sales and allow students to rely on Rick’s being open and having options that regularly suit their needs.”
The grand opening celebration will be held from 7:30 to 9:30 a.m. Linn said all espresso bar beverages will be 50 percent off, and there will be samples of coffee and treats. Representatives from Caffe Umbria will also be there to share artisan coffee stories.
Rick’s regular hours will be 7:30 a.m. to 4 p.m. Monday through Friday.
